Briarpatch: Buckwheat Bleanies

In this class we will be making a sprouted buckwheat batter, which we will then use to make hotcakes or sprouted “bleanies” (a popular type of European flatbread), as well as a savory herb batter. For the herb batter we will add fresh herbs along with a pinch of sea salt. We will then use this bright green savory buckwheat batter as a dip with slices of veggies, and to make colorful fried battered veggies. You’ll also learn how to add in any flour you like, to create even more types of flatbread. You’ll see how quick and easy it is to make the sprouted buckwheat batter and use it in various entrees – a gluten-free life saver! Vegan, gluten-free.

NEW TEACHER! John is a cooking teacher and caterer in the Santa Cruz area who specializes in organic, vegetarian, and gluten-free food. He has taught several cooking classes at the University of Santa Cruz, including at the PICA center (Program in Community and Agroecology). He is passionate about spreading awareness of healthy, sustainable, plant-based foods and their preparation.
