Spring is here….some days! With the weather lightening up, so should your diet. This month we will bring spring into your kitchen and onto your plate. This time of year calls for favoring pungent, bitter and astringent tastes, and foods that build prana – your kinetic energy. Prana includes anything and everything green, but especially tender young greens and chlorophyll rich foods like spirulina! The most vital way to get prana is by foraging for wild spring ephemerals such as creasy greens and chickweed, popping up all over the forest. Tonight, we’ll talk about and enjoy plenty of spring veggies as we make a hearty Rice and Asparagus Soup served with a Fresh Herb Frittata. This is the fourth class in a series from Kathi and Gwen; you don’t have to have attended the other classes to enjoy this one.
