Briarpatch Co-op Cooking Classes: Ayurvedic Cooking Food as Medicine Part 6

The season of fresh green salads is in full swing! Serendipitously, this is the time of year when greens can be the most bitter – just what your body needs most to stay balanced. Light and refreshing young greens also support late spring cleansing and increase prana (liveliness). Seek a sense of freshness and vitality in your vegetables, and celebrate their delicate, healthful goodness with recipes that will satisfy your body on a deep level. We will be preparing a hearty dish of Red Potato, White Bean and Dandelion Greens with a fresh Strawberry Salad. Served with Dandelion Tea, it is a perfect meal to prepare your body for the heat of summer. This is the latest offering in an ongoing series from Kathi and Gwen; you don’t need to have attended the previous classes to enjoy this one.
