Briarpatch Co-op Cooking Classes: Spring Salads & Spreads

Skip into spring with fresh, aromatic salads and rich, healthy spreads to smother across your breads/crackers or veggies. We will make a series of three salads, three dressings and three dips that will leave you craving more of this new healthy diet. Salad recipes include a zesty Ginger Mandarin, Mizuna and Sunflower Seed Salad with a Creamy Poppyseed Vinaigrette, a dark, rich Kale and Spinach Salad with Roasted Parsnips, Yams, Caramelized Shallots and Pecans with a Light Champagne Vinaigrette, and – last but not least – a Grapefruit, Butter Lettuce, and Avocado Salad with a Honey-Mustard and Parsley Vinaigrette. For dips, we will enjoy a vegan paté consisting of walnuts and mushrooms, a vegan Herb-Ricotta Cheese and a Raw Red Bell Pepper Sauce. This class aims to create a playful “spring” in your step as you take these recipes back to your kitchen to explore more fun, nourishing ways to feed yourself!

SEVERAL PRICE OPTIONS ARE AVAILABLE. We have two options for Cooking Class registration, General Admission is $35, the price is $45 for our Benefactor Level (Benefactors support our Kitchen Kindness tickets!).
