Briarpatch Co-op Cooking Classes: Polenta Enchilada Pie & Super Nachos

Winter is a great time to warm up the house with delicious baked dishes! Utilizing the three sisters: corn, beans, and squash, we will make a delightful Polenta Pie Crust and also prepare a bed of corn chips to hold our delicious blend of toppings. Slow cooked beans poured into a hot pan of sautéed corn, olives, garlic, and squash, simmered with sweet tomato sauce will make the perfect topping. Topped with cheese (dairy and vegan), sliced squash, sweet peppers, and pumpkin seeds for a little crunch. And what nachos would be complete without a little salsa or hot sauce? We will make a small simple batch of Roasted Chili Sauce for the spice lovers out there. These pies and nachos make a hearty, delicious meal best to enjoy around a fire with good friends and family.
