Briarpatch Co-op Cooking Classes: Transitional Vegan: Easy faux meats and cheeses
Have you toyed with the idea of going vegan but gave up because you couldn’t imagine life without cheese? In this class you will learn how easy it is to replicate the familiar flavors and textures of meat and cheese with simple recipes using easy-to-find ingredients. We’ll prepare a gooey nacho-style cheese sauce, a customizable, versatile “meat” and a firm, sliceable cheese for your next wine-and-cheese gathering. The cheese is gluten free and vegan; the “meat” is vegan, not gluten free.
New teacher – Aurelia d’Andrea has taught faux meat and cheese workshops in France and worked as a recipe developer for Vegetarian Times magazine. She has also ghost-written two vegan cookbooks for Callisto Media. Additionally, she is a vegan magazine editor and a passionate cook.
