Briarpatch Co-op Cooking Classes: Winter Vegetarian: Part 1

This is the first of a four-class series (once a month) on vegetarian cooking in winter with Joseph. In each class we will focus on root vegetables, squashes, beans and green leafy vegetables in dishes that will satisfy hunger after a cold day of work. None of these recipes can be made quickly; each takes time and energy to prepare and meals will be appreciated by family and friends everywhere. We will make in this class: Stuffed Green and Red Peppers with stuffed freshly cooked vegetables, rice and cheese on top; baked Japanese Yam topped with seasonal freshly stir-fried vegetables; and Brown Rice with Black Eyed Peas, with cooked fresh vegetables. All three dishes include at least one ingredient that will surprise and bring the dish to new levels.
