Briarpatch Co-op Cooking Classes: WINTER VEGGIES #3

We continue our classes on beans, squashes, root vegetables and dark green leafy vegetables that are the staple of winter vegetarianism. We will make Split peas with Sweet Potato served with Sautéed Collard Greens, fresh tomato, and rice. Next we’ll create a dish of squash, green beans or fava beans and tomato sauce. Last but not least we will make the dish that my T’ai Chi Master Da Liu loved, Rice Noodles with Collard Greens. All dishes will have one secret ingredient that surprises.
Joseph Guida has been vegetarian almost all of his life. He loves to cook, eat, and share food—especially organic healthy food from his local co-op.
