Briarpatch: Hearty Main Course Soups

Learn how to make two hearty soups from two different parts of the world. First we will make a quick chicken broth from a whole chicken, as a soup base. Then we’ll make Asian Hot Pot Soup, served with a large platter of shrimp, chicken, tofu, and vegetables to choose from right at the table. Tortilla Soup includes shredded chicken and stewed tomatoes, and is served with a condiment platter of avocado, fresh cheese, cilantro, green onion, crème, chile peppers, and tortilla chips made fresh from corn tortillas. Packed full of flavor, these soups are great main courses. Gluten-free.

Co-op Cooking Classes are held in the BriarPatch Co-op Community Cooking School at 648 Zion St. in Nevada City.
