Briarpatch: Plant Based Nutrition #1

Whether you’re an experienced vegetarian, are interested in transitioning to a plant-based diet, or are just veg-curious, this class is an excellent resource for how to maintain a nutritionally balanced plant-based diet. Shauna, a registered dietitian, will discuss vegan nutrition and meal planning in the preparation of simple foundation recipes for a complete day. We will sample Pumpkin Walnut Muffins with Maple Cream; Roasted Cauliflower with Chickpeas and Lemon Tahini Dressing; and Kale and Portobello Tostados with Chipotle Cashew Cream. Vegan.

Co-op Cooking Classes are held in the BriarPatch Co-op Community Cooking School at 648 Zion St. in Nevada City.
