Tess’s Kitchen Cooking Classes: Taking the Fear out of Fish

Fish cooking doesn’t have to be scary. We will be preparing a few easy dishes that use fish that are in season right now. Baked Steelhead Salmon with Herb Butter makes its own sauce as the butter melts into the fish. We will also make a quick Pan-Fried Petrale with Brown Butter Lemon/Caper Sauce. Ahi tuna takes on a new complexion when slowly cooked with herbs and olive oil to make Tuna Confit, better than anything out of a can.
