Tess Kitchen: Spanish with Roberta DesBouillons

There are many influential aspects to Spanish cuisine. It is both regional and coastal-making good use of locally grown or harvested ingredients such as olive oil, shellfish, chickpeas and lentils. Spanish dishes are hallmarked by their fragrant spices; cinnamon, saffron and cumin. We will make a Paella with Spanish rice and clams; a flavorful, spiced wine called Sangria and Spanish hand pies called Empanadas.
