This time of year is so exciting, starting with the days getting longer, with the tiny bursts of green grass and flowers (especially violets!!!) peeking out of the ground and most of all, a feeling of renewal!
Like the new year, this feels like a time to create new habits, break old ones and take inventory of just how we are living!
One of my goals this spring is to take advantage of the new leafy things that we have available in all our stores……baby kale, chard, parsley, dill, avocados, cucumbers (more summer, but still)by making a new morning ritual: The GREEN DRINK.
Friends swear by this uber clean and zingy way to start the day. Here is the recipe that will replace (or go hand in hand)with my morning coffee.
GO TO GREEN DRINK
Ingredients
2 cups spinach, kale or chard
2 cups cucumber
1 head of celery
1/2 inch or teaspoon ginger root
1 bunch parsley
2 apples
Juice of 1 lime
Juice of 1/2 lemon
Water if needed
Directions
Combine all ingredients in a blender. This makes approximately 28-30 ounces, or 3-4 servings.
Kids, apparently love this too because of the sweetness of the apples…….
